Biryani, a rich and aromatic rice dish, has won hearts across the world. Ingredients

For the Rice:

  • 1 ½ cups Basmati rice
  • 3 cups water
  • 1 bay leaf
  • 4-5 green cardamom pods
  • 1 cinnamon stick
  • 3-4 cloves
  • Salt to taste

For the Vegetable Mix:

  • 1 tablespoon ghee or vegetable oil
  • 1 large onion, thinly sliced
  • 1 cup mixed vegetables (carrots, beans, peas, potatoes, etc.), chopped
  • 1 tomato, chopped
  • 2 teaspoons ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • 2 tablespoons yogurt (optional, but adds creaminess)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Mint leaves, chopped (for garnish)

For Layering:

  • 2 tablespoons ghee or vegetable oil
  • A pinch of saffron strands (optional, but adds color and fragrance)
  • 2 tablespoons warm milk (for saffron)
  • Fried onions (optional, for garnish)

Instructions

Step 1: Preparing the Rice

  1. Rinse the Rice: Wash the basmati rice under cold water until the water runs clear. This removes excess starch and ensures the rice cooks perfectly.
  2. Cook the Rice: In a large pot, bring 3 cups of water to a boil. Add the bay leaf, cardamom pods, cinnamon stick, and cloves. Then add the washed rice and cook it until it is 70% done (still firm). Drain the excess water and set the rice aside.

Step 2: Preparing the Vegetable Mix

  1. Cook the Onions: In a large pan, heat 1 tablespoon of ghee or oil. Add the sliced onions and sauté them until they turn golden brown. Set aside half of these fried onions for garnishing.
  2. Cook the Vegetables: In the same pan, add cumin seeds and sauté for a few seconds. Then, add the chopped mixed vegetables and cook for 5-6 minutes. Add the chopped tomatoes and cook until they soften.
  3. Spices & Yogurt: Add ginger-garlic paste, coriander powder, red chili powder, garam masala, and turmeric powder to the vegetables. Mix well and let the spices cook for a minute. Stir in the yogurt (if using), and cook until the mixture thickens. Season with salt.
  4. Simmer: Add a little water if necessary to keep the vegetable mix moist. Let the vegetable mix simmer for 5 minutes and turn off the heat.

Step 3: Layering the Biryani

  1. Prepare the Saffron Milk: In a small bowl, soak saffron strands in 2 tablespoons of warm milk. This will bring out the beautiful color and aroma.
  2. Layering: In a large pot or a biryani vessel, start by layering half of the cooked rice at the bottom. Then, spread half of the vegetable mix over the rice. Add a little of the saffron milk and sprinkle some fried onions. Repeat the layers with the remaining rice and vegetable mix, finishing with the saffron milk and fried onions on top.
  3. Final Steam: Drizzle the remaining ghee over the top and cover the pot with a tight-fitting lid. You can also seal the edges with dough to trap the steam. Cook the biryani on low heat (you can place the pot on a tawa/griddle to avoid direct flame) for about 20-25 minutes. This process, called “Dum,” allows the flavors to meld and the rice to absorb the spices.

Step 4: Garnishing and Serving

Once done, turn off the heat and let the biryani sit for 10 minutes. Garnish with fresh chopped mint and coriander leaves. Serve the biryani hot with a side of raita or a cucumber salad.
