Biryani, a rich and aromatic rice dish, has won hearts across the world. This iconic dish is a celebration of spices, fragrance, and the perfect blend of rice and vegetables, making it a favorite at family gatherings, festivals, and special occasions. If you’ve been wanting to try making a flavorful vegetable biryani at home, here’s an easy-to-follow recipe that will make your taste buds dance with joy!
Ingredients
For the Rice:
- 1 ½ cups Basmati rice
- 3 cups water
- 1 bay leaf
- 4-5 green cardamom pods
- 1 cinnamon stick
- 3-4 cloves
- Salt to taste
For the Vegetable Mix:
- 1 tablespoon ghee or vegetable oil
- 1 large onion, thinly sliced
- 1 cup mixed vegetables (carrots, beans, peas, potatoes, etc.), chopped
- 1 tomato, chopped
- 2 teaspoons ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- 2 tablespoons yogurt (optional, but adds creaminess)
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Mint leaves, chopped (for garnish)
For Layering:
- 2 tablespoons ghee or vegetable oil
- A pinch of saffron strands (optional, but adds color and fragrance)
- 2 tablespoons warm milk (for saffron)
- Fried onions (optional, for garnish)
Instructions
Step 1: Preparing the Rice
- Rinse the Rice: Wash the basmati rice under cold water until the water runs clear. This removes excess starch and ensures the rice cooks perfectly.
- Cook the Rice: In a large pot, bring 3 cups of water to a boil. Add the bay leaf, cardamom pods, cinnamon stick, and cloves. Then add the washed rice and cook it until it is 70% done (still firm). Drain the excess water and set the rice aside.
Step 2: Preparing the Vegetable Mix
- Cook the Onions: In a large pan, heat 1 tablespoon of ghee or oil. Add the sliced onions and sauté them until they turn golden brown. Set aside half of these fried onions for garnishing.
- Cook the Vegetables: In the same pan, add cumin seeds and sauté for a few seconds. Then, add the chopped mixed vegetables and cook for 5-6 minutes. Add the chopped tomatoes and cook until they soften.
- Spices & Yogurt: Add ginger-garlic paste, coriander powder, red chili powder, garam masala, and turmeric powder to the vegetables. Mix well and let the spices cook for a minute. Stir in the yogurt (if using), and cook until the mixture thickens. Season with salt.
- Simmer: Add a little water if necessary to keep the vegetable mix moist. Let the vegetable mix simmer for 5 minutes and turn off the heat.
Step 3: Layering the Biryani
- Prepare the Saffron Milk: In a small bowl, soak saffron strands in 2 tablespoons of warm milk. This will bring out the beautiful color and aroma.
- Layering: In a large pot or a biryani vessel, start by layering half of the cooked rice at the bottom. Then, spread half of the vegetable mix over the rice. Add a little of the saffron milk and sprinkle some fried onions. Repeat the layers with the remaining rice and vegetable mix, finishing with the saffron milk and fried onions on top.
- Final Steam: Drizzle the remaining ghee over the top and cover the pot with a tight-fitting lid. You can also seal the edges with dough to trap the steam. Cook the biryani on low heat (you can place the pot on a tawa/griddle to avoid direct flame) for about 20-25 minutes. This process, called “Dum,” allows the flavors to meld and the rice to absorb the spices.
Step 4: Garnishing and Serving
Once done, turn off the heat and let the biryani sit for 10 minutes. Garnish with fresh chopped mint and coriander leaves. Serve the biryani hot with a side of raita or a cucumber salad.
