Mango pickle is a popular Indian condiment made with raw mangoes, spices, and oil. Here's a recipe for Mango Pickle:
Ingredients:
- 2 raw mangoes, peeled and chopped into small pieces
- 2 tablespoons of salt
- 1 tablespoon of mustard seeds
- 1 tablespoon of fenugreek seeds
- 1 teaspoon of turmeric powder
- 1 teaspoon of red chilli powder
- 1/2 teaspoon of asafoetida
- 1/4 cup of mustard oil (or any other oil of your choice)
- Sterilized glass jar with a tight lid
Instructions:

In a bowl, mix together the chopped mangoes and salt. Keep aside for 2-3 hours.

Heat a small pan over low heat and dry roast the mustard seeds and fenugreek seeds until fragrant. Let them cool and then grind them into a fine powder.

Drain any excess water from the mangoes and transfer them to a clean and dry bowl.

Add the ground mustard and fenugreek powder, turmeric powder, red chilli powder, and asafoetida to the mangoes. Mix well.

Heat the mustard oil in a small pan over low heat until it starts to smoke. Let it cool for a few minutes.

Add the cooled oil to the mango mixture and mix well.

Transfer the pickle to a sterilized glass jar with a tight lid.

Let the pickle sit at room temperature for 2-3 days to allow the flavours to develop.
