Here's a recipe for Berry Kheer, a delicious and creamy dessert made with berries:
Ingredients:
1 cup mixed berries (strawberries, blueberries, raspberries, etc.), washed and chopped
1 liter full-fat milk
1/2 cup basmati rice, washed and soaked for 30 minutes
1/2 cup sugar (adjust to taste)
1/4 teaspoon cardamom powder
A few strands of saffron
Slivered almonds and pistachios for garnish
Fresh mint leaves for garnish (optional)
Instructions:
In a heavy-bottomed pan, bring the milk to a boil over medium heat. Stir occasionally to prevent it from sticking to the bottom.
Drain the soaked rice and add it to the boiling milk. Cook the rice on low heat, stirring occasionally to avoid sticking, until it becomes soft and the milk thickens. This will take approximately 30-40 minutes.
Once the rice is cooked and the milk has thickened, add the sugar and mix well until it dissolves completely.
Add the chopped berries to the kheer and cook for an additional 5-7 minutes, allowing the berries to soften and release their flavors.
Crush the saffron strands slightly and add them to the kheer along with the cardamom powder. Stir well to distribute the flavors evenly.
Remove the kheer from the heat and let it cool to room temperature.
Once the kheer has cooled, refrigerate it for a couple of hours to chill.
Before serving, garnish the berry kheer with slivered almonds and pistachios. You can also add a few fresh mint leaves for a touch of freshness and color.
Serve the berry kheer chilled in individual bowls or glasses and enjoy!
