Knead again with lukewarm water
If the dough was kept in the refrigerator, knead the dough again before making rotis. Use lukewarm water for this. By keeping it in the refrigerator, a hard layer is formed on the top surface of the dough. To remove this layer the dough has to be kneaded again. Apply water and knead it from above. Make roti after the dough gets cold from the refrigerator. It will become like fresh dough.
Do not cook bread on high flame
While making roti from fresh flour or flour kept in the refrigerator, keep one thing in mind if you are making roti after taking out the dough from the refrigerator and do not have time to knead it again, then do not cook the roti on very high flame. By doing this the roti becomes hard like papad.
