Ingredients of Lauki ki Barfi
1 kg bottle of gourd
3 1/2 cups milk
3/4 cup milk powder
1 cup grated coconut
2 tbsp ghee
3/4 cup sugar
2 drops of edible food colour
How to make gourd barfi
Step 1- Peel and grate the bottle gourd
Peel the bottle gourd and take out the hard seeds. Now grate the bottle gourd and collect it in a bowl.
Step 2- Fry the bottle gourd
Heat 1 tbsp ghee in a pan. Add the grated bottle gourd and fry for 5-6 minutes or till it becomes soft.
Step 3- Add milk
Now add 2 cups of milk and cook for 20-22 minutes.
Step 4- Add sugar and colour
Now add sugar and green food colour to it. Cook for a few minutes or till the sugar melts completely. Switch off the flame and keep it aside.
Step 5- Make the Coconut Mixture
Heat 1 tbsp ghee in another pan. Pour 1.5 cups of milk and let it boil. Add grated coconut and mix. Cook for 8-10 minutes or till the mixture thickens.
Step 6- Mix both mixtures together
Add the thick coconut mixture to the bottle gourd mixture. Keep on medium flame and cook for 8-10 more minutes.
Step 7- Pour in a mould and let it set
Now put the barfi mixture in a mould and make it smooth. Let it set for 3-4 hours or till it takes shape properly.
Step 8- Cut into barfi
Now just cut the frozen slab into the shape of a barfi.
