Ingredients- 4 medium sized whole tomatoes, 1 red capsicum, 1 onion, 3 cloves garlic, 2 tablespoons olive oil, 1 cup chopped basil leaves, salt, 1-2 teaspoons red chilli.

Cut the tomatoes in half and place them upside down on a baking sheet. Red chilli also has to be done in the same way. Apply olive oil on them.

Now roast it in the oven at 400°F for about 35 minutes.

- Cut onion and garlic into cubes.

- Add light olive oil to the pan and fry the onion until it turns golden.

Now add chopped basil leaves, salt, roasted tomatoes, roasted capsicum.

- Cook it on low flame for 30 to 35 minutes.

To make the soup tasty, you can add chopped mint leaves and red chillies on top.
