What is the story behind this?

The story of this unique coffee is linked to a small wild animal called the Asian Palm Civet, found in Southeast Asia. This animal is active at night and prefers to live alone in the forests. Originally, it ate fruits, berries, insects, and small creatures, but when coffee cultivation began in areas like Java, Sumatra, and Sulawesi in Indonesia, it developed a fondness for coffee cherries.

The civet eats ripe coffee cherries, but the seeds in its stomach are not fully digested. These seeds are passed out in its feces. Years ago, workers on coffee plantations noticed this. They collected these seeds, cleaned them thoroughly, and then roasted them to make coffee. Surprisingly, the coffee prepared this way tasted completely different from regular coffee.

Why is this special?

According to experts, natural enzymes and stomach acids break down some of the proteins in coffee beans as they pass through the civet's digestive system. This reduces the coffee's bitterness and gives it a smoother, more aromatic, and slightly chocolatey flavor. This is why it is considered so special by many coffee lovers around the world. Wild civets select only the best and fully ripe coffee cherries. This is why naturally produced kopi luwak is considered superior in quality. But its growing popularity has created a major crisis for this animal.

Today, to produce large quantities of kopi luwak, civets are captured from the wild and confined in small cages. They are forcibly fed only coffee cherries, while their natural diet and open environment are deprived of them. Continuous captivity and the same diet lead to stress, malnutrition, and various diseases, leading in many cases to premature death. Although Indonesia has established regulations and limits on the capture of wild civets, experts say these are not effectively enforced everywhere. This is why the kopi luwak trade remains controversial due to concerns about animal cruelty and wildlife conservation.
