Some mushrooms contain vitamin D, and exposure to light under the right conditions can increase vitamin D2 levels. However, not every mushroom has the same amount of vitamin D. Mushrooms that have received UV or sunlight exposure may have higher levels than regular mushrooms.

If you're looking for something different from your usual vegetable dishes, Mushroom Handi is a great option. It's rich in flavor and easily paired with roti, naan, or rice. Making it at home doesn't require much effort.

 

What is needed to make Mushroom Handi?

For this, take about 250 grams of mushrooms. Add 2 onions, 2 tomatoes, 1 teaspoon ginger-garlic paste, 2 green chilies, 1 teaspoon cumin seeds, 1/2 teaspoon turmeric, 1 teaspoon coriander powder, 1/2 teaspoon red chili powder, 1/2 teaspoon garam masala, and salt to taste. To make the gravy a little richer, you can use 2 tablespoons of yogurt or a little cream. Additionally, you need 1 to 2 tablespoons of oil and some coriander leaves.


 

First, prepare the mushrooms.

After cleaning the mushrooms, avoid soaking them in water for too long. After cleaning them, dry them thoroughly and then cut them into medium-sized pieces. If the mushrooms are very large, you can cut them into quarters. Mushrooms do not need to be cooked for long. According to dietitians, prolonged cooking can reduce the vitamin D content. For example, some research has shown that prolonged boiling can lead to vitamin D deficiency. Therefore, it is best to avoid cooking mushrooms for longer than necessary.

Now prepare the handi gravy.

Heat oil in a pan or pot. Add cumin seeds and let them crackle. Then add finely chopped onions and fry until lightly golden. Add ginger-garlic paste and green chilies and cook for a few minutes. Then add chopped tomatoes and cook until the tomatoes soften. Now add turmeric, coriander powder, red chili, and salt and fry the spices thoroughly. If the spices start sticking to the pan, add a little water. When the oil begins to separate from the spices, the gravy is ready.


 

Add mushrooms and cook.

Now add the chopped mushrooms to the prepared masala and mix well. Mushrooms release water on their own, so there's no need to add too much water initially. Cover the pan and cook over medium heat for a few minutes. When the mushrooms are soft and well combined with the masala, add a little yogurt or cream. If using yogurt, whisk it well first and then reduce the heat to low. Then add the garam masala and cook for a minute or two. Finally, sprinkle finely chopped coriander leaves on top. Your mushroom handi is ready.

Considering mushrooms as a good source of vitamin D, one shouldn't expect every mushroom to provide the same amount. The vitamin D content of mushrooms depends heavily on the variety and the amount of UV light they receive, according to the ingredients. Some research also found that exposing common mushrooms to midday sunlight for a short period can increase their vitamin D content. However, this depends on the intensity of sunlight, the weather , and the condition of the mushrooms.
