How to make jackfruit biryani at home?

Always use raw jackfruit to make jackfruit biryani. First, peel the jackfruit thoroughly and cut it into small pieces. Before cutting the jackfruit, apply mustard oil to your hands, knife, and cutting board. This will prevent the jackfruit's sticky juice from sticking to your hands and utensils. Then, lightly boil the jackfruit or lightly fry it with salt. This removes its rawness and improves its taste.

Prepare rice like this

Wash the basmati rice thoroughly and soak it in water for about 30 minutes. Then, bring a pot of water to a boil and add salt, bay leaves, cinnamon, and cardamom. Cook the rice until it's about 70 percent cooked, then drain and set aside. Be careful not to cook the rice completely, as it will need to be cooked over low heat later.

Prepare the masala like this

Heat oil or ghee in a pan. Temper the mixture with cumin seeds, bay leaves, cloves, and cardamom. Add finely chopped onions and fry until golden brown. Add ginger-garlic paste and cook thoroughly. Add tomatoes and prepare the masala. Once the masala is cooked, add turmeric, chili powder, coriander powder, and biryani masala. Add the pre-prepared jackfruit and mix well with the spices. You can also add a little yogurt if desired. Cook over low heat for a few minutes to allow the spices to thoroughly incorporate into the jackfruit.

To cook the biryani, take a heavy-bottomed pot. First, spread a layer of jackfruit masala. Top it with a layer of par-cooked rice. Then, add some saffron milk, ghee, fried onions, and almonds and cashews.

Prepare two to three layers in this manner. Then, cover the pot tightly. If desired, seal the lid with flour to prevent steam from escaping. Cook over low heat for about 10 to 20 minutes. This allows the rice and spices to meld well, enhancing the biryani's flavor significantly. When the biryani is ready, remove it while it's still hot and serve with raita or your favorite chutney.
