Easy recipe to make the famous Tahari of Uttar Pradesh

1. First, wash the rice thoroughly and soak it for 10–15 minutes. This will help the rice cook faster and more evenly.

2. Heat oil or ghee in a pressure cooker or a pan. Add cumin seeds and bay leaves. As soon as the cumin seeds begin to crackle, add the chopped onion and sauté until lightly golden.

3. Then add the ginger-garlic paste and green chilies. Add the finely chopped tomatoes and cook until the oil begins to separate.

4. Add the potatoes, carrots, and peas, and sauté lightly for 2–3 minutes. Then, add the turmeric, coriander powder, garam masala, and salt, and mix well.

5. Add the soaked rice and stir gently to avoid breaking the rice. Then, add the water, close the lid, and cook for two whistles.

6. Turn off the heat and let the pressure in the cooker release naturally. Open the lid, and your fragrant and delicious instant vegetable tahari is ready.

7. Finally, add green coriander on top and serve it hot with curd, boondi raita, or salad.
