Method of making Panjiri Laddu
Ingredients : Gond (Gum balls) - 50 grams, Ghee - 1 cup, Semolina - 1 cup, Almonds (chopped) - 1/4 cup, Pistachios (chopped) - 1/4 cup, Raisins - 2-3 tbsp, Fresh coconut (grated) - 1/4 cup, Fennel seeds - 1 tsp, Cardamom powder - 1/2 tsp, Sugar - 1/2 cup (according to taste), Dates (chopped) - 5-6, Finely chopped ginger - 1/2 tsp.
Method : First of all, put the gum on the pan and roast it on low flame till it becomes light brown. Crush it well. Now heat ghee in a pan. Add semolina in it and fry it well on low flame till it becomes light golden. Now add chopped almonds, pistachios, raisins, coconut, fennel, cardamom powder, dates and ginger. Mix well and fry for 2-3 minutes. Now add roasted gum in it and mix well. Then add sugar and let it cook till it dissolves well. After the batter cools down, apply ghee on your hands and make small laddus. Now serve the laddus after cooling down.
