Ingredients

  • ½ kg garlic cloves
  • half liter mustard oil
  • 12 dry whole red chilies
  • 3 teaspoons red chili powder
  • ½ tsp turmeric powder
  • ½ bowl of curry leaves
  • three teaspoons fennel
  • 3 teaspoons yellow mustard seeds
  • ½ tsp fenugreek seeds
  • half teaspoon cumin
  • half teaspoon ajwain
  • one teaspoon mustard
  • 1/2 tsp asafoetida
  • salt to taste

process :

  • First of all, peel the garlic bud and put one spoonful of oil in it, and keep it in the sun for an hour.
  • Now coarsely grind dry whole red chilies, mustard seeds, fennel, cumin seeds, celery, and fenugreek seeds in a mixer.
  • After this, keep a pan on low flame on the gas and put mustard oil in it, and let it heat up.
  • When the oil is well heated, turn off the gas and after a few minutes add salt and asafoetida powder as per taste.
  • Now add garlic cloves, red chili powder, and curry leaves and mix well.
  • After this, add ground coarse spices and yellow mustard seeds and mix them well.
  • Now after the pickle is completely cooled, keep it in a glass or sugar pot and cover it with a cotton cloth.
  • Show it sunlight daily for a week and keep mixing it well with the help of a spoon.
