Ingredients:

  • 4 raw tomatoes,
  • 4 green chilies cut into big pieces,
  • 1 green garlic leaves chopped,
  • 8-10 garlic cloves,
  • 1 1/2 tbsp mustard,
  • 1/2 tbsp whole coriander,
  • 1/2 tsp cumin,
  • 1/2 tsp 4 tsp fenugreek,
  • 1 pinch asafoetida,
  • mustard oil,
  • salt as per taste,
  • juice of 1/2 lemon as desired

Method :

  • Wash and wipe the tomatoes and cut them lengthwise into four to six pieces. Make a smooth paste by adding a little water to mustard, coriander, cumin, and garlic.
  • Place a pan on medium flame and heat oil in it.
  • Put fenugreek in the oil and let it become golden. After this add asafoetida, garlic leaves, and chopped green chilies and fry lightly.
  • Add chopped green tomatoes to it and fry them well for five to seven minutes.
  • When the tomatoes become soft, add spices.
  • All the things have to be fried for four to five more minutes.
  • Add water and salt as per taste and cover the pan with a lid and cook for 15 minutes.
  • Keep in mind that if you want to keep it saltier then add more water.
  • After cooking, if the salan seems less sour, then add lemon juice.
  • Serve with parathas and puris.
