Ingredients:
- 4 raw tomatoes,
- 4 green chilies cut into big pieces,
- 1 green garlic leaves chopped,
- 8-10 garlic cloves,
- 1 1/2 tbsp mustard,
- 1/2 tbsp whole coriander,
- 1/2 tsp cumin,
- 1/2 tsp 4 tsp fenugreek,
- 1 pinch asafoetida,
- mustard oil,
- salt as per taste,
- juice of 1/2 lemon as desired
Method :
- Wash and wipe the tomatoes and cut them lengthwise into four to six pieces. Make a smooth paste by adding a little water to mustard, coriander, cumin, and garlic.
- Place a pan on medium flame and heat oil in it.
- Put fenugreek in the oil and let it become golden. After this add asafoetida, garlic leaves, and chopped green chilies and fry lightly.
- Add chopped green tomatoes to it and fry them well for five to seven minutes.
- When the tomatoes become soft, add spices.
- All the things have to be fried for four to five more minutes.
- Add water and salt as per taste and cover the pan with a lid and cook for 15 minutes.
- Keep in mind that if you want to keep it saltier then add more water.
- After cooking, if the salan seems less sour, then add lemon juice.
- Serve with parathas and puris.
