Tomato rice is very tasty to eat. It is a popular dish in South Indian cuisine and is easy to make. Here's a simple recipe for Tomato Rice:
Ingredients:
1 cup basmati rice (washed and soaked for 30 minutes)
2 medium-sized tomatoes, finely chopped
1 medium-sized onion, finely chopped
2 green chilies, sliced
1 tsp ginger-garlic paste
1 tsp cumin seeds
1 small 1/2 tsp mustard seeds
1/2 tsp turmeric powder
1/2 tsp red chili powder
1/2 tsp garam masala
few curries leaves
2 tbsp oil or ghee
Salt to taste
Fresh coriander leaves for garnish

Instruction:
Heat oil or ghee in a large pan or pressure cooker.
Add cumin and mustard seeds. Let them crackle.
Add curry leaves and chopped onions. Fry till the onion becomes transparent.
Add chopped green chilies and ginger-garlic paste. Fry for a minute till the raw smell disappears.
Add finely chopped tomatoes and cook till they are soft and mushy.
Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for two minutes so that the flavors meld.
Sieve the soaked rice and put it in the pan. Mix gently, ensuring that the rice is covered with the tomato mixture.
add 1.5 to 2 cups of water. stir well.
If using a pressure cooker, close the lid and cook on a medium flame for 1 whistle. If using a pan, cover it with a tight-fitting lid and cook on a low flame till the rice is fully cooked and absorbs the water.
Once the rice is cooked, take it off the heat and leave it for a few minutes. Fluff the rice gently with a fork.
Garnish with fresh coriander leaves.
Serve the delicious Tomato Rice hot with Raita or any side dish of your choice.
