Here's a recipe for making tandoori paneer at home:
Ingredients:
250 grams paneer (Indian cottage cheese), cut into cubes
1 cup thick yogurt (curd)
2 tablespoons ginger-garlic paste
1 tablespoon tandoori masala
1 tablespoon Kashmiri red chili powder (for color, adjust according to spice preference)
1 tablespoon lemon juice
1 tablespoon oil
Salt to taste
Chaat masala (for garnish)
Fresh coriander leaves (cilantro) for garnish
Onion rings and lemon wedges (for serving)
Instructions:
In a bowl, combine the yogurt, ginger-garlic paste, tandoori masala, Kashmiri red chili powder, lemon juice, oil, and salt. Mix well to make a marinade.
Add the paneer cubes to the marinade, ensuring they are well coated. Let the paneer marinate for at least 30 minutes to allow the flavors to develop. You can also marinate it overnight in the refrigerator for even better results.
Preheat your oven to 400°F (200°C). If you don't have an oven, you can use a grill or a stovetop griddle pan.
Thread the marinated paneer cubes onto skewers. If using wooden skewers, make sure to soak them in water for about 30 minutes beforehand to prevent them from burning.
Place the paneer skewers on a baking sheet lined with aluminum foil or directly on a grill or griddle pan.
Bake or grill the paneer skewers for about 10-15 minutes, turning them occasionally, until they are lightly charred and cooked through. The cooking time may vary depending on your oven or grill, so keep an eye on them.
Once cooked, remove the paneer skewers from the oven or grill and let them rest for a few minutes.
Sprinkle some chaat masala and freshly chopped coriander leaves (cilantro) over the tandoori paneer skewers for added flavor.
Serve the tandoori paneer hot with onion rings, lemon wedges, and mint chutney or any other sauce of your choice.
