Ingredients to make Soya Biryani
For marinate

Soya chunks - 1 cup
Curd thick - 1 cup
Potato - 1
Capsicum – 1/2
Onion – 1/2
Carrot - 1
Ginger-garlic paste – 1/2 tsp
Turmeric - 1/4 tsp
Red chilli powder - 1 tsp
Biryani masala powder - 1 tsp
salt to taste

Other material
Rice - one and a half cup
Fried Onion – 3 tbsp
Biryani masala powder - 1/2 tsp
Mint, coriander leaves - 3-4 teaspoons
Bay leaf - 1
Cloves – 4-5
Cinnamon - 1 piece
star anise - 1
Cardamom - 4-5
Black pepper - 1/2 tsp
Finely chopped onion – 1
Desi Ghee - 3 tbsp
salt to taste

How to make Soya Biryani
To make soya biryani, first heat water in a bowl.
Add soya chunks to it and soak them for 15 minutes. When the soya becomes soft, squeeze them and keep them aside.
Now take a mixing bowl and add curd to it and whisk it well.
After this, add red chilli powder, biryani masala powder, turmeric, ginger-garlic paste and salt as per taste to the curd, mix well and whisk.
Now add soaked soya chunks, chopped carrots, square chopped capsicum, onion and chopped potato pieces to this mixture and mix well.
Now keep this mixture in the fridge for 1 hour to allow it to marinate properly.
Now put 2 tbsp ghee in a pressure cooker and heat it on medium flame.
When the ghee melts, add all the dried spices including bay leaves and cinnamon and fry them.
When the aroma starts coming from the spices, add finely chopped onion and fry it.
After this, add ginger-garlic paste and fry for some more time.
Now take out the marinated soya from the fridge and put it in the cooker add the vegetables and spread it well.
After this, add soaked rice and spread it on the spicy soya.
- Keep in mind that first soak the rice in water for 20-25 minutes and only then use it.
Now sprinkle fried onions, biryani masala powder, coriander leaves, salt as per taste and 1 tsp desi ghee on top of this layer.
Now without disturbing the layers, pour two and a quarter cups of water and cover the cooker and cook the biryani till 2 whistles.
After this turn off the gas. When the pressure of the cooker is released automatically, open the lid and take out the soya biryani on a plate.
Now serve Biryani hot with chutney or raita.
