Sabudana Kheer is consumed during fasting but you can make and enjoy it at home on normal days as well. The easy recipe to make Sabudana Kheer is as follows:

Ingredients:

  • 1/2 cup sabudana
  • 4 cups milk
  • 1/2 cup sugar
  • 1/2 tsp cardamom powder
  • 2 tbsp chopped nuts (cashews, almonds, pistachios)
  • 1 tbsp raisins (optional)
  • a pinch of saffron threads (optional)
  • ghee for frying nuts

Instructions :

  • Wash the sabudana under running water until the water runs clear. Soak the sago in enough water for about 2-3 hours or till they become soft and plump. Drain the water and keep it aside.
  • Heat ghee in a small pan and fry the chopped nuts till they turn golden brown. Take them out of the pan and keep them aside.
  • In a heavy-bottomed pan or wok, bring the milk to boil on medium heat, while stirring occasionally to prevent milk from sticking.
  • Add the soaked sago to the boiling milk and reduce the flame. Cook sabudana in milk, stirring occasionally, till it becomes translucent and soft. This will take about 15-20 minutes.
  • Add sugar and cardamom powder to the pan and mix well till the sugar dissolves completely. And keep cooking for 5-7 minutes so that the flavor gets mixed.
  • Add fried nuts, raisins, and saffron. Mix well and cook for a minute or two.
  • Take the pan off the heat and let the sago kheer cool down to room temperature.
  • Serve the Sago Kheer chilled or at room temperature, garnished with more nuts, if desired.
