Rajasthan has many dishes which are famous all over India for their mouth-watering taste. One such dish is Mirchi Vada, which holds a special place in everyone's heart. When it comes to a popular breakfast, it is considered no less than samosa or kachori. Mirchi Vada is especially liked in breakfast. To make this, green chilies are stuffed with a mixture of potatoes and spices and deep fried. It is often served with coriander chutney or tomato ketchup, which enhances its taste. This recipe involves the use of gram flour, potatoes, and various spices. This recipe is quick to make and relatively easy.
Material:
Green chillies (big and thick) – 5-6
Gram flour – 1 cup
Boiled potatoes – 2-3
Red chilli powder – 1 teaspoon
Garam masala - 1 teaspoon
Amchur (dried mango powder) – 1/2 teaspoon
oil for frying
salt to taste

First of all, boil the potatoes, peel them, and mash them well in a mixing bowl.
Add red chili powder, garam masala, dry mango powder, and salt to the mashed potatoes and mix everything well.
Take green chilies and make a slit in the middle, taking care not to cut them completely.
Take out the seeds from inside the chili and separate them.
Heat oil in a pan for frying on medium flame.
While the oil is heating, stuff the prepared potato masala into the peppers, making sure they are filled evenly.
Make a thick batter by adding gram flour and water in a separate bowl.
Dip each stuffed chili in the gram flour batter, making sure it is well coated.
Carefully drop the chilies coated in gram flour into the hot oil one by one.
Fry the peppers until golden brown, making sure they are cooked evenly. Once done, take them out from the oil and keep them on a plate.
