Stuffed bitter gourd, also known as bharva karela, is a popular Indian dish made with bitter gourd stuffed with a delicious filling. The stuffing helps to balance the bitterness of the vegetable. We have brought the recipe for this for you.

Ingredients:

4-6 bitter gourds

2 tbsp oil

1 tsp cumin seeds

1 large onion, finely chopped

2-3 green chilies, finely chopped

1 tbsp ginger-garlic paste

1/2 tsp turmeric powder

1 tsp coriander powder

1 tsp Cumin powder

1/2 tsp Red chili powder

Salt to taste

1 tbsp Dry mango powder

Fresh coriander leaves for garnish

Instruction:

Wash the bitter gourds and lightly scrape off the rough skin with a knife. Cut each bitter gourd lengthwise and scoop out the seeds and pulp inside.

Rub salt all over the bitter gourd including the inside and leave them like this for about 30 minutes. It helps in reducing bitterness. Wash bitter gourd under running water and squeeze out excess water.

In a pan, heat oil on medium heat. Add cumin seeds and let them splutter.

Add finely chopped onions and fry till golden brown.

Add ginger-garlic paste and chopped green chilies. Fry for a minute till the raw smell disappears.

Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well.

Fill each bitter gourd with the prepared stuffing with the help of a spoon or fingers. Press the filling down firmly to ensure it stays intact during cooking.

Heat oil in a pan and add stuffed bitter gourd. Cover the pan and cook on a low flame for about 20-25 minutes, turning the bitter gourds occasionally, till they become soft and cooked.

Sprinkle dry mango powder over the cooked bitter gourd and mix gently so that it is evenly coated on the bitter gourd.

Garnish with fresh coriander leaves.

Serve stuffed bitter gourd hot with roti or rice as a side dish.
