Ingredients for making Punjabi Dum Aloo
Small potatoes - 15
Curd thick - 3-4 cups
Onion finely chopped - 1
Ginger-garlic paste – 1 tsp
Whole coriander - 1 tbsp
Cumin - 1/2 tsp
Turmeric - 1/4 tsp
Bay leaf - 1
Red chili powder - 1 tsp
Asafoetida - 1 pinch
Cardamom - 1
Cinnamon - 1-inch piece
Cashew - 1 tbsp
Sugar – 1 tsp
Cloves - 1
Kasuri Methi - 1/2 tsp
Green coriander leaves chopped - 2 tbsp
oil - as required
salt - as per taste
How to make Punjabi Dum Aloo
To make Punjabi Dum Aloo full of taste, first, boil the potatoes. After this, remove the peels of all the potatoes and make holes in them with the help of a fork and spoon. Now take a pan and put 2 tbsp oil in it and heat it on medium flame. After the oil is hot, put the boiled potatoes in the pan and fry till it turns light golden. After this, take out the roasted potatoes on a plate and keep them aside.
Now put cumin, cardamom, cinnamon, whole coriander seeds, cashew nuts, and cloves in the mixer and grind them finely. Now again add 3 tbsp oil in the pan and heat it. When the oil is hot, add bay leaves, finely chopped onions, and a pinch of asafoetida and fry. After sauteing the onion while stirring for a minute or two, add ginger-garlic paste to it and cook stirring for 30 seconds after mixing.
Now put the prepared spice powder in the pan and sauté for 1 minute. After this, take curd in a utensil and after beating it well, pour it little by little into the pan and mix it with the help of a ladle. Now add turmeric and red chili powder to the gravy and mix and let the gravy cook. When the oil separates from the gravy, add potato, sugar, kasoori fenugreek, and salt as per taste.
Let the vegetable cook on low flame for 2-3 minutes, after that add three-fourths cup of water. Now let the vegetable boil on medium flame. Boil the vegetable till the gravy thickens. After this turn off the gas. Tasteful Punjabi Dum Potato curry is ready. It can be served with roti, paratha or naan for lunch or dinner.
