Material
Maida - 4 cups
Mint - 1 cup
Cumin - 1 tbsp
Green chili - 2
Baking soda - 2 tsp
salt to taste
Oil - 3 cups
Ginger - 1/2 tsp
Coriander powder - 1/2 tsp
Fennel powder - 1/2 tsp
Asafoetida - as per taste

Method
1. First clean the mint leaves thoroughly and cut them and keep them aside.
2. Now take refined flour in a vessel and add cumin, baking soda, green chilies, and salt to it and knead the dough with mint.
3. Now cover it and keep it aside for about 10 to 12 minutes.
4. After 12 minutes, make small balls of dough and roll out the kachoris.
5. Heat oil in a pan and fry it well.
6. Your Pudina Kachori is ready. Now take it out on a plate with pickle or chutney and serve hot.
