Here's a quick recipe for Pohe ki kheer, a delicious Indian dessert made with flattened rice (poha):

Ingredients:

1 cup thick poha (flattened rice)

2 cups milk

1/4 cup condensed milk

1/4 cup sugar (adjust to taste)

1/4 teaspoon cardamom powder

1 tablespoon ghee (clarified butter)

A few saffron strands (optional)

Chopped nuts for garnishing (e.g., almonds, pistachios)

Instructions:

Rinse the poha under running water for a few seconds. Drain the water and set aside.

Heat ghee in a deep pan or saucepan over medium heat.

Add the rinsed poha to the pan and sauté for 2-3 minutes until the poha becomes slightly crisp. Stir continuously to prevent it from burning.

In another saucepan, bring the milk to a boil over medium heat.

Add the sautéed poha to the boiling milk and simmer for about 5-7 minutes, stirring occasionally. This will allow the poha to cook and absorb the milk.

Add condensed milk, sugar, and cardamom powder to the pan. Stir well to combine all the ingredients.

Continue simmering the mixture for another 2-3 minutes until the kheer thickens slightly. Keep stirring to prevent sticking.

If using saffron strands, crush them slightly and dissolve them in a tablespoon of warm milk. Add this saffron milk to the kheer and mix well. It will give a lovely color and flavor to the kheer.

Remove the pan from heat and allow the kheer to cool for a few minutes.

Garnish the Pohe ki kheer with chopped nuts of your choice, such as almonds or pistachios.

Serve the kheer warm or chilled, according to your preference.
