Ingredients:
1 cup roasted peanuts
2-3 green chilies (adjust according to your spice preference)
2 tablespoons grated coconut (optional)
A small piece of tamarind (soaked in water) or 1 tablespoon of tamarind paste (optional)
Salt to taste
Water (as needed)
For tempering (optional): oil, mustard seeds, curry leaves, and dried red chilies
Instructions:
In a blender or food processor, add the roasted peanuts, green chilies, grated coconut (if using), tamarind, and salt.
Blend the ingredients until you get a coarse paste. Gradually add water as needed to achieve the desired consistency.
Transfer the chutney to a bowl.
Optional tempering: 4. Heat a little oil in a small pan and add mustard seeds. Let them splutter.
Add curry leaves and dried red chilies. Sauté for a few seconds until fragrant.
Pour the tempering over the peanut chutney and mix well.
