Payasam is a traditional South Indian dessert made with milk, rice, sugar, and nuts. There are different types of payasam like ada payasam, semiya payasam, and paal payasam, etc. Here's a recipe to make paal payasam:

Ingredients:

  • 1/2 cup rice
  • 1 litre milk
  • 1 cup sugar (or as per taste)
  • 1/4 cup ghee
  • 1/4 cup cashew nuts
  • 1/4 cup raisins
  • 1/2 tsp cardamom powder

Instructions:

  1. Wash the rice and soak it in water for 30 minutes.

  2. Drain the water and cook the rice in 2 cups of water until it becomes soft and fluffy.

  3. In a heavy-bottomed pan, boil the milk over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.

  4. Once the milk comes to a boil, add the cooked rice and stir well. Let it simmer for 20-25 minutes until the rice is fully cooked and the milk has thickened.

  5. Add sugar to the pan and stir well until it dissolves completely.

  6. In a separate pan, heat ghee and fry the cashew nuts and raisins until they turn golden brown. Add them to the payasam and stir well.

  7. Add cardamom powder to the payasam and stir well.

  8. Let the payasam simmer for another 5-10 minutes until it thickens to a creamy consistency.

  9. Serve the paal payasam hot or chilled garnished with more nuts and raisins.
