Payasam is a traditional South Indian dessert made with milk, rice, sugar, and nuts. There are different types of payasam like ada payasam, semiya payasam, and paal payasam, etc. Here's a recipe to make paal payasam:
Ingredients:
- 1/2 cup rice
- 1 litre milk
- 1 cup sugar (or as per taste)
- 1/4 cup ghee
- 1/4 cup cashew nuts
- 1/4 cup raisins
- 1/2 tsp cardamom powder
Instructions:
-
Wash the rice and soak it in water for 30 minutes.
-
Drain the water and cook the rice in 2 cups of water until it becomes soft and fluffy.
-
In a heavy-bottomed pan, boil the milk over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
-
Once the milk comes to a boil, add the cooked rice and stir well. Let it simmer for 20-25 minutes until the rice is fully cooked and the milk has thickened.
-
Add sugar to the pan and stir well until it dissolves completely.
-
In a separate pan, heat ghee and fry the cashew nuts and raisins until they turn golden brown. Add them to the payasam and stir well.
-
Add cardamom powder to the payasam and stir well.
-
Let the payasam simmer for another 5-10 minutes until it thickens to a creamy consistency.
-
Serve the paal payasam hot or chilled garnished with more nuts and raisins.
Enjoy your delicious homemade paal payasam!
