The taste of food doubles in winter. Various types of seasonal vegetables come in the market, which are colorful as well as beneficial for taste and health. In this season, people like to eat spinach-bathua parathas, potato-onion parathas and radish and cabbage parathas. Pickle enhances the taste of such food items. Fresh and delicious pickles can be made quickly in the winter season. In this season, especially radish carrot pickle is made, although due to lack of strong sunlight in winter, there is a problem of drying or melting the pickle, but instant carrot and radish pickle is easily made even without drying it in the sun. It neither takes much time to make it nor does it require sunlight. Let us know the easy method of making instant pickle in winter.

Ingredients for making pickle

Two grated carrots, one grated radish, (if you want you can cut it into thin and small pieces) one teaspoon grated ginger, salt, turmeric powder, red chili powder, half teaspoon fennel, a pinch of fenugreek seeds, two teaspoons mustard oil, one-two teaspoons vinegar.

Method of making pickle
Step 1- First of all wash and peel the carrots and radishes thoroughly. Now grate them.

Step 2- Collect grated carrots and radishes in a large vessel and add salt according to taste, a pinch of turmeric, red chili powder, fennel, fenugreek seeds and ginger and mix well.

Step 3- Heat mustard oil in a pan. Add some fenugreek seeds and fry. When the oil is hot and the fenugreek seeds turn light golden, add the mixture of radish and carrot to it.

Step 4- Add vinegar on top and mix well. Oil and vinegar will cook the pickle quickly and it will also remain fresh.

Step 5- When all the ingredients are mixed well and the spices and oil are well absorbed in the carrot-radish pieces, then understand that the pickle is ready.

You can serve it immediately with food. If you want, you can also keep it for a few hours. This pickle remains good for a week without storing it in the fridge. But if you want to store it for a long time, then you can keep it in an airtight container and keep it in the fridge.
