How to make Carrot Ginger Soup

  • Heat olive oil in a pan and fry onions in it. After that add salt, and black pepper and cook for 5 minutes. Now put cloves and garlic in it and mix chopped carrots with it. Now cover it and let it cook for 5 minutes.

Ingredients

4 bunches mustard leaves, 1-1/2 bunches spinach, 1 bunch bathua, ½ tbsp corn flour, 3 tsp jaggery, grated 1-inch piece ginger

For Tempering

2 tbsp desi ghee, a pinch of asafoetida, 1 onion, 8 cloves, garlic 2 nos, green chili 2, tomato finely chopped, salt as per taste, 1 tsp cumin, crushed, roasted, 1/2 tsp red chili powder Ginger for garnishing.

How to prepare Saag

  • Wash all the green vegetables thoroughly.
  • Roughly chop the leaves and finely chop the stems. Remove hard frosts.
  • Peel, wash, and finely chop the onion and garlic.
  • In a heavy-bottomed pan, add mustard, spinach, bathua, and green chilies, also add chopped ginger, salt, and water. Let it boil.
  • When it boils well, remove the water and grind the greens.
  • Now put these ground greens in a heavy-bottomed pan, add maize flour, red chili powder, chopped green chilies, and grated jaggery. Mix well.
  • After cooking for a while, add the water of greens left after boiling to these pureed greens.
  • Let it cook for 30 minutes while stirring occasionally.

For Tempering

  • Heat ghee in a pan, add asafoetida and chopped onions, and fry till translucent.
  • Add garlic, green chilies, roasted cumin seeds, ground cumin seeds, and red chili powder to the same. Fry on medium flame, add tomato puree, and fry till the ghee leaves.
  • Pour hot mustard greens over this tempering and mix the tempering in the whole.
  • Remove in a bowl, garnish with a long thin slice of ginger and serve with hot roti.

Masala Gud

The effect of jaggery is warm, which is why it is good to eat jaggery in winter. Jaggery is rich in antioxidants and minerals zinc and selenium. Which naturally helps in increasing immunity. Masala Gur is an interesting recipe that is enriched with the goodness of many superfoods like jaggery, ghee, ginger, etc.

Ingredients

  • 500 grams jaggery
  • 1-2 tbsp ghee
  • less than 1/2 cup of dried fruits
  • 1 tbsp flaxseed, pumpkin seeds, sunflower seeds
  • 1 tbsp black pepper powder
  • 1/2 tsp dry ginger
  • Fennel seeds less than 1 teaspoon

How To Make

  • Dry roast all the dry fruits and seeds for a crunchy texture.
  • Coarsely grind the dry fruits and chop them.
  • Now put ghee in a pan. Grease the pan well with ghee.
  • Crush the jaggery and add it to the pan. Let it melt on low flame. Add some water if needed.
  • Add black pepper powder, dry ginger, and aniseed to the melted jaggery and mix.
  • Add dry fruits super seeds and mix well.
  • Now turn off the flame and take out the jaggery mixture on a big plate. When you take out the mixture of jaggery, grease it beforehand.
  • Let it cool slightly, then cut it into small pieces.

Methi Thepla
