Ingredients:
- 1 cup dried chickpeas, soaked overnight
- 2 onions, chopped
- 2 tomatoes, chopped
- 1 green chili, chopped
- 1 teaspoon ginger, grated
- 1 teaspoon garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt, to taste
- 3 tablespoons oil
- Water, as needed
Instructions:
- Drain and rinse the soaked chickpeas. Add them to a pressure cooker or a pot with enough water to cover them by an inch. Pressure cook for 2-3 whistles or cook on low heat for 45-50 minutes until they are soft.
- In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger, garlic, and green chili and sauté for 1-2 minutes.
- Add chopped tomatoes and sauté until they turn mushy.
- Add coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes until the masala is fragrant and the oil starts to separate.
- Add cooked chickpeas and mix well. Add water as needed to adjust the consistency.
- Cover and cook for 10-15 minutes on low heat, stirring occasionally.
- Garnish with chopped coriander leaves and serve hot with rice, naan, or bhatura.
