Material :
4 raw tomatoes, 4 green chilies cut into big pieces, 1 green garlic leaves chopped, 8-10 garlic cloves, 1 1/2 tbsp mustard, 1/2 tbsp whole coriander, 1/2 tsp cumin, 1/2 tsp 4 tsp fenugreek, 1 pinch asafoetida, mustard oil, salt as per taste, juice of 1/2 lemon as desired
Method :
Wash and wipe the tomatoes and cut them lengthwise into four to six pieces. Make a smooth paste by adding a little water to mustard, coriander, cumin, and garlic.
Place a pan on medium flame and heat oil in it.
Put fenugreek in the oil and let it become golden. After this add asafoetida, garlic leaves, and chopped green chilies and fry lightly.
Add chopped green tomatoes to it and fry them well for five to seven minutes.
When the tomatoes become soft, add spices.
All the things have to be fried for four to five more minutes.
Add water and salt as per taste and cover the pan with a lid and cook for 15 minutes.
- Keep in mind that if you want to keep it saltier then add more water.
After cooking, if the salan seems less sour, then add lemon juice.
- Serve with parathas and puris.
