Here's a quick and easy recipe for Khajur Ka Halwa (Date Halwa):

Ingredients:

1 cup dates, pitted and chopped

1/4 cup ghee (clarified butter)

1/2 cup semolina (sooji/rava)

1 cup milk

1/4 cup chopped nuts (such as almonds, cashews, and pistachios)

1/4 teaspoon cardamom powder

2 tablespoons sugar (adjust to taste)

Instructions:

Heat the ghee in a non-stick pan over medium heat.

Add the chopped dates and sauté for a couple of minutes until they become soft and mushy.

In a separate pan, roast the semolina (sooji) on low heat until it turns golden brown and releases a fragrant aroma. Set it aside.

In the pan with dates, add the roasted semolina and mix well.

Pour in the milk and stir continuously to avoid lumps. Cook the mixture for 4-5 minutes until it thickens.

Add the chopped nuts, cardamom powder, and sugar. Mix everything together and cook for another 2-3 minutes until the halwa reaches a desired consistency.

Turn off the heat and let the halwa cool for a few minutes.

Serve the Khajur Ka Halwa warm, garnished with some extra chopped nuts.
