Ingredients for making potato-okra curry
Bhindi – 1/2 kg
Potato – 3
Onion – 2
Garlic cloves – 4–5
Cumin powder - 1 tsp
Red chili - 1.5 tsp
Coriander powder – 1 tsp
Dry mango - 1 tsp
Turmeric - 1/2 tsp
Garam masala - 1/2 tsp
Chili flakes - 2 tsp
Oil - 1/4 cup
salt - as per taste

To make delicious potato-okra curry, first, wash the okra thoroughly and clean it with the help of a cloth. After this, take potatoes, peel them, and cut them into small pieces. Now wash potatoes like okra and take them out in a bowl. Now take a pan, put oil in it, and heat it on medium flame. When the oil is hot, put potatoes in it. Now fry them till they become golden. After this, take them out on a plate.
Now garlic and onion have to be taken. In this, cut the onion into long slices and also cut the garlic into small pieces. After this, we will put them in the remaining oil in the pan. Now they will also be fried till they turn brown so that the rawness is gone. Now put okra in it and fry it with onions for about 1-2 minutes. Now lighten the gas flame and add fried potatoes to it and mix both of them well and cook. Now add red chili powder, coriander powder, cumin powder, dried mango powder, chili flakes, and salt as per taste to the vegetable and mix.
Now let it cook for 2 to 3 minutes. After this, cover the pan and leave the vegetable to cook for 5-6 minutes. However, with the help of a ladle, keep stirring it in between. By doing this, the vegetable does not stick to the pan. When the potatoes and okra become completely soft, turn off the gas and take out the pan. Now you can serve this tasty Aloo Bhindi with roti or paratha.
