There is no need to tell you how beneficial beetroot is for our health, I am sure. So apart from salad, you can also try beetroot pickle. Know its recipe.

Material :
4 beetroot, 1/2 cup mustard oil, 1/4 tsp fenugreek seeds, 1/2 tsp fennel seeds, 3 tbsp ground mustard seeds, 3/4 tbsp salt or to taste, 1 tbsp sugar, 1/2 tsp black mustard, 8-10 Curry leaves (washed and dried), 1/4 tsp white vinegar

Method :
Peel the beetroot, wash it, and squeeze out the water by putting it in a strainer.

Cut slices of beetroot and keep it in the sun till the water dries up.

After this, after heating oil in a pan, add black mustard and add curry leaves and cool the oil after removing it from the flame.

The aroma of curry leaves must have entered the oil, so remove them if you want.

Now put all the spices, and salt in the oil and cook it by adding dry beetroot sugar.

Finally, add vinegar and stir.

When it cools completely, fill the pickle in a dry jar.

The pickle will be ready in 8-10 days.
