An easy way to incorporate Moringa leaves into your diet is to make parathas. Wheat flour is combined with moringa leaves, green onion greens, coriander leaves, green chilies, ginger, garlic, and a variety of spices. This enhances the flavor of the parathas and adds a touch of variety to your everyday meal.

Ingredients for Moringa Paratha

To make this recipe, you need three-quarters of a cup of drumstick leaves, half a cup of wheat flour, and half a cup of spring onion leaves. Additionally, add a little coriander leaves, two green chilies, half a teaspoon of ginger, and half a teaspoon of garlic. Spices include half a teaspoon of red chili powder, a quarter teaspoon of turmeric, a teaspoon of carom seeds, a quarter teaspoon of mango powder, and a quarter teaspoon of chaat masala. Add salt to taste, a tablespoon of rice bran oil, half a teaspoon of garam masala, and half a teaspoon of coriander powder.


 

How to prepare the paratha dough

First, thoroughly clean and finely chop the drumstick leaves and coriander leaves. Place them in a large bowl. Then, add wheat flour, salt to taste, turmeric, red chili powder, cumin seeds, carom seeds, finely chopped green chilies, and spring onion leaves. Add grated ginger and garlic. Add a little rice bran oil and mix everything thoroughly.

Next, add chaat masala, dry mango powder, and coriander powder, and mix everything thoroughly once again. Now, add lukewarm water little by little and begin kneading the dough. Knead it thoroughly, just like chapati dough. Once the dough is ready, cover it with a damp cloth and let it rest for about 10 minutes. This will allow the dough to set and make it easier to roll out the parathas.


 

Now make hot Moringa Parathas

Remove the dough that has rested for 10 minutes and divide it into small portions. Coat each portion with dry flour and roll it out like a paratha using a rolling pin. Heat a pan on the stove and drizzle with a little oil. Place the rolled paratha on the pan and fry it well on both sides.

Cook the parathas until they turn light golden brown on both sides. Prepare the remaining parathas in the same way. Serve the hot moringa parathas with the prepared chutney.

Make spicy chutney with Moringa Paratha

A delicious chutney can also be prepared to accompany the parathas. To do this, first roast half a cup of peanuts over low heat. Add a tablespoon of rice bran oil to the same pan and lightly fry four chopped green chilies.

Then, add chopped ginger, garlic, onion, and a little coriander leaves. Add half a piece of freshly chopped coconut and sauté everything for a few minutes. Finally, add some tamarind and two tablespoons of roasted chana dal. After lightly sautéing everything, turn off the heat and let the mixture cool.

After it cools, put it in a mixer and grind it thoroughly. Now prepare the tempering for the chutney. Heat some oil in a pan and add mustard seeds, cumin seeds, urad dal, chana dal, dried red chilies, and curry leaves and fry them. When the spices begin to smell good, add this tempering to the prepared chutney and mix well.
