Dhaba-Style Chole: While we add spices, onions, tomatoes, and other ingredients when making chole at home, they still don't taste quite like the ones we'd find at a dhaba. The chole's color is also lighter, and it lacks that sour, smoky flavor. If this happens to you, keep a few simple things in mind.
Chickpeas should be soaked in water overnight, or for at least 8 hours. Soaking for a shorter period of time doesn't soften them properly. Add a little salt and a small amount of baking soda to the water while soaking. This helps the chickpeas soften quickly. A tea bag is very useful for a darker color like the ones at a dhaba. While boiling the chickpeas, tie some tea leaves in a cloth and add them to the water. You can also add dried amla (Indian gooseberry). This gives the chickpeas a dark brown color. Boiling chickpeas in water alone doesn't taste as good. Add bay leaves, cinnamon, black cardamom, and a little salt while boiling. This makes the chickpeas flavorful from within as well.
Cooking the spices properly and bringing out the right flavour
It's crucial to make a paste of onion, tomato, ginger, and garlic and fry it thoroughly. Cook the spices until oil begins to appear at the edges. If the spices remain uncooked, the chickpeas will taste unappetizing. Simply adding a packet of chickpea masala won't create a dhaba-like taste. You can also add cumin, coriander powder, mango powder, dried fenugreek leaves, and a little garam masala. These spices enhance the flavor of the chickpeas.
Dhaba chole are a bit sour, so you can add mango powder or pomegranate seeds to improve it. Tomatoes also add a hint of sourness, but relying solely on tomatoes doesn't achieve the desired flavor. Therefore, adjust the sourness to your liking.
Give this small touch at the end
Once the chickpeas are cooked, crush some kasuri methi (kasuri methi) with your hands and add it. You can add a little ghee or butter and coriander leaves on top. This enhances the flavor and makes them look delicious. Making dhaba-style chickpeas doesn't require any special ingredients. Simply soak the chickpeas for the right amount of time, boil them with a tea bag, cook the spices thoroughly, and add the right ingredients at the end. By following these simple steps, you can make homemade chickpeas dark in color and taste like dhaba-style chickpeas.
