Dhaba Style Toor Dal Tadka Recipe: Pigeon pea dal is a dish that can easily become a part of your everyday diet. It's easy to prepare and doesn't require many ingredients. However, the true flavor and aroma of the dal comes from its tempering. When a tempering of asafoetida, cumin seeds, and spices in ghee is poured over hot dal, it transforms both its taste and aroma. A similarly prepared asafoetida-cumin tadka can elevate even ordinary pigeon pea dal to a special level.

To prepare this dal, you need pigeon pea lentils, salt, water, a little asafoetida, turmeric, and a little sugar if needed. Ghee, asafoetida, cumin seeds, Kashmiri red chili powder, garam masala, and a little coriander powder are used for tempering.
First cook tur dal like this
First, take the pigeon pea lentils in a large bowl and rinse them thoroughly 4 to 5 times with water until the water runs clear. Then, add about 2.5 cups of water and soak them. If time permits, the lentils can be soaked for 20 to 30 minutes. If time is short, they can be cooked without soaking; just cook for a little longer in a pressure cooker.
Now put the lentils in a pressure cooker or a large saucepan. Add salt, turmeric, and a little asafoetida and cook over medium-high heat. After the pressure cooker whistles once, reduce the heat to medium-low and cook for about 7 to 10 minutes. If cooking in a saucepan, cover and cook until the lentils are soft enough to mash easily.
Once the lentils are cooked, remove them from the heat and let the steam escape. After opening the cooker, stir the lentils thoroughly with a ladle to ensure a smooth and creamy consistency. If the lentils appear too thin, they can be cooked uncovered over low heat for a few more minutes. If the lentils become too thick, add a little hot water and stir. A little sugar can also be added to balance the flavor.
Now prepare the aromatic asafoetida-cumin tadka
Before making the tadka, have all the ingredients ready, as cooking the spices in ghee for too long can spoil their flavor. The tadka takes less than two minutes to prepare. The spices can give off a strong aroma when added to the hot ghee, so it's best to run the exhaust during this time.
Place a small pan over low heat and add a teaspoon of ghee and let it melt. Once the ghee melts, add a pinch or two of asafoetida and let it crackle for about 5 seconds. Next, add the cumin seeds and cook for about 10 seconds, allowing them to infuse the ghee with their flavor and aroma. Avoid increasing the heat, as the spices can burn in overheated ghee. Now add Kashmiri red chili powder and stir. Next, add about a quarter teaspoon of coriander powder and garam masala, stirring for a few seconds. Then, remove the pan from the heat. The remaining heat will allow the spices to cook for a while longer, and the tadka will be ready.
Pour the tadka over the hot dal.
Transfer the prepared pigeon pea dal to a bowl and pour hot asafoetida-cumin tadka over it. This tempering of asafoetida, cumin seeds, and spices cooked in ghee enhances the dal's flavor. It can be served with hot rice and can also be accompanied by dry vegetables or pickles. This method of tempering pigeon pea dal is not complicated. Cooking the dal thoroughly and adding the spices at the right time enhances both its taste and aroma. Notably, it doesn't require many ingredients, yet the asafoetida-cumin tadka adds a rich flavor to the dal.
