Chilli Potato Recipe : If you like eating Indo-Chinese food, then Chilli Potato will definitely be on your list. It is such a wonderful combination of crispy potato pieces and spicy, sweet chutney that it explodes with taste in the mouth as soon as you eat it. Material
- Potatoes – 4 to 5 medium size
- Cornflour – 3 tablespoons
- Refined flour – 1 tablespoon
- Red chilli powder – 1/2 tsp
- Salt – as per taste
- Oil - for frying
- Onion – 1/2 cup (cut into cubes)
- Capsicum – 1/2 cup (cut into cubes)
- Green chillies – 1-2 (finely chopped)
- Ginger – 1 inch (finely chopped)
- Garlic – 4-5 cloves (finely chopped)
- Soya sauce – 1 tablespoon
- Red chili sauce – 1 tablespoon
- Tomato ketchup – 2 tablespoons
- Vinegar (sirka) – 1 teaspoon
- Sugar – 1/2 tsp (optional)
- Spring onion leaves - for garnishing
Method
- Prepare the potatoes: Peel the potatoes and cut them into long and thick finger shapes. Soak them in cold water for 15 to 20 minutes to remove excess starch.
- Coating: Drain the potatoes and dry them well. Mix cornflour, maida, red chili powder and salt in a bowl. Dip the potato pieces in this mixture and coat them well. If needed, you can sprinkle a little water so that the coating sticks well.
- Fry the potatoes: Heat oil in a pan and fry the potato pieces on medium flame until golden and crispy. Take out the fried potatoes on a plate.
- Make the sauce: Heat some oil in a pan. Add finely chopped ginger and garlic and fry lightly. Then add green chillies and onion cubes and cook until they become slightly soft.
- Add vegetables: Now add capsicum cubes and cook for 1 to 2 minutes so that they remain a little crunchy.
- Add sauce: Add soy sauce, red chili sauce, tomato ketchup, vinegar and sugar (if using) to the pan and mix well. Let the sauce cook on low flame for 1-2 minutes.
- Mix the potatoes: Add the fried potato pieces to the sauce and mix well so that the sauce coats the potatoes well.
- Garnish and serve: Serve hot chilli potato garnished with green onion leaves.
