Milk curdling at home is nothing new. It's a common problem in every Indian kitchen. Sometimes milk curdles when heated, or sometimes its taste changes due to prolonged storage. In such cases, most people use it to make paneer. But if you want to try something different, curdled milk can be used to prepare many delicious dishes. But before using curdled milk, make sure it doesn't have a putrid smell, mold, or any unusual color. If the milk hasn't spoiled and has only curdled, you can try these easy recipes.
Curdled milk cutlets
You can make delicious and crispy cutlets from curdled milk. Strain the curdled milk through a muslin cloth to remove excess water. Add two boiled and mashed potatoes, finely chopped green chilies, coriander, a little ginger, salt, red chili, and garam masala. Mix the mixture thoroughly and add 2-3 tablespoons of breadcrumbs or semolina. Form small cutlets with your hands. Heat some oil on a pan and fry the cutlets until golden and crispy on both sides. Serve them with green chutney or tomato sauce.
Sweet tikki made from curdled milk
If you're craving something sweet, you can make sweet tikkis from curdled milk. First, strain the curdled milk thoroughly to remove any excess water. Add some finely ground semolina, sugar or powdered sugar, cardamom powder, and some chopped dried fruits. Let the mixture sit for a few minutes to allow the semolina to absorb the moisture. Then, form small tikkis and fry them in a little ghee or oil over low heat. Remove the tikkis when they're lightly golden on both sides. You can serve them hot or cold.
Sweets from curdled milk
Curdled milk can also be used to make a simple Indian sweet. Pour the strained milk solids into a pan and cook over low heat, stirring occasionally. Add sugar and cardamom powder to taste. When the mixture thickens slightly, add chopped cashews, almonds, or pistachios. Stir continuously until the mixture begins to leave the pan. Spread it on a plate, let it cool, and cut it into desired shapes. If desired, you can garnish it with some dried fruit.
