Ingredients required to make tofu

Soybeans 1 cup (soaked) Lemon juice or white vinegar 2 to 3 tablespoons Water as needed

 

How to make tofu

Step 1: Making Soy Milk

First of all, soak 1 cup soybeans in water overnight or at least for 8 hours. When the grains swell, wash them thoroughly. Now grind the soaked soybeans in a mixer by adding some water. Mix this paste with about 3 cups of water and boil it well. When a milk-like mixture is formed, filter it through a muslin cloth or sieve. Your soy milk is ready.

Step 2: Curdling the Milk

Heat the prepared soya milk on low flame. When it starts boiling slightly, slowly add lemon juice or vinegar to it. The milk will start curdling in a few minutes and the water (buttermilk) will start separating.

Step 3: Freezing the Tofu

Now filter this curdled milk in a muslin cloth and pour cold water over it to remove the sourness of lemon. Tie the cloth tightly and place something heavy (like a rolling pin or book) on top so that the water drains out properly. Leave it like this for 20-30 minutes. As soon as you open the cloth, you will have fresh, soft and homemade tofu in your hand. You can use it in salad, vegetable, stir fry or grill.
