You can easily make this dish of kofta with raw bananas, buckwheat flour and cashew nuts. However, this dish is specially made during Navratri fast. You can also make this for parties and potlucks. This is an easy-to-make North Indian recipe that you can cook in just 35 minutes. You must try this crispy dish once. Your friends and family will like it very much.
To make this fast, keep a pressure cooker on medium heat and put raw bananas in it along with water. Cover the lid and let the bananas cook till 3 whistles. Meanwhile, place the cashews on a chopping board and roughly chop them. Keep the chopped cashews in a bowl.
When the bananas are cooked, turn off the gas and open the lid when the steam comes out. Drain the water and take out the boiled bananas. Let them cool slightly and peel them in a bowl. Mash the bananas with the help of a masher. Now add buckwheat flour, chopped cashew nuts, mint leaves, green chillies, chopped ginger, rock salt, ground black pepper and cumin powder. Mix well to make a thick mixture for making koftas.
Make balls of kofta. Now put a broad non-stick pan on medium heat and add oil to it. When the oil becomes hot, put the patties in it and fry them till they become golden brown and crispy from both sides. Serve immediately with any dip of your taste
