Here is a recipe for vegetable Manchurian:

Ingredients:

  • 1 cup finely chopped cabbage
  • 1/2 cup grated carrots
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped bell peppers
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp ginger-garlic paste
  • 1 tsp soy sauce
  • 1 tsp red chilli sauce
  • Salt to taste
  • Oil for deep frying

For the sauce:

  • 1 tbsp oil
  • 1 tsp ginger-garlic paste
  • 2 tbsp finely chopped onions
  • 2 tbsp finely chopped bell peppers
  • 1 tsp soy sauce
  • 1 tsp red chilli sauce
  • 1 tsp vinegar
  • 1 tsp cornstarch dissolved in 1/4 cup water
  • Salt to taste

Instructions:

  1. In a mixing bowl, combine the chopped cabbage, grated carrots, chopped onions, and bell peppers. Add all-purpose flour, cornstarch, ginger-garlic paste, soy sauce, red chilli sauce, and salt. Mix well until you get a dough-like consistency.

  2. Divide the mixture into small balls and shape them into balls. Heat oil in a deep pan and fry the vegetable balls until they turn golden brown. Set them aside on a paper towel to drain excess oil.

  3. To make the sauce, heat oil in a pan and add ginger-garlic paste. Saute for a few seconds and add finely chopped onions and bell peppers. Cook for 1-2 minutes until they turn slightly soft.

  4. Add soy sauce, red chilli sauce, vinegar, and salt. Mix well.

  5. Add cornstarch dissolved in water and stir well. Cook for 1-2 minutes until the sauce thickens.

  6. Add the fried vegetable balls to the sauce and stir well. Cook for 1-2 minutes until the balls are coated well with the sauce.

  7. Garnish with finely chopped spring onions and serve hot.
