Zucchini - one kilo
Turmeric - 1 tsp
Oil – 2 tbsp
Salt - as per taste
Onion - 1 cup
Coriander leaves - one teaspoon

Step-1 - Cut the vegetables
First of all, to make this vegetable, remove the peels of the zucchini. Cut it into small pieces. After this cut the onion into small pieces. After this cut coriander.
Step – 2 Fry the zucchini
When all the vegetables are cut, keep a pan on the gas. Heat it. Put some oil in it. Put chopped zucchini pieces in it. Fry it for a few minutes. After this add chopped onion. Cook it for 2 to 3 minutes.
Step – 3 Add spices to the vegetable
Now put spices in the pan. Add red chilli powder, turmeric and salt to it. Let it cook till it becomes soft. When this vegetable starts leaving oil, turn off the gas. After this, garnish this vegetable with coriander leaves. After this, you can serve this vegetable with hot rice.
