Tinda masala is a flavorful dish made with round gourds called "tinda." It can be a delicious way to incorporate vegetables into your meals. Here's a recipe for Tinda Masala:

Ingredients:

4-5 tinda (round gourds), washed and diced

2 tablespoons oil

1 teaspoon cumin seeds

1 medium onion, finely chopped

2 tomatoes, finely chopped

1 tablespoon ginger-garlic paste

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust according to your spice preference)

1 teaspoon coriander powder

1/2 teaspoon garam masala

Salt to taste

Fresh coriander leaves, chopped (for garnishing)

Instructions:

Heat oil in a pan or kadai over medium heat.

Add cumin seeds and let them splutter.

Add finely chopped onions and sauté until they turn golden brown.

Add ginger-garlic paste and sauté for a minute until the raw smell disappears.

Add chopped tomatoes and cook until they soften and the oil starts separating from the mixture.

Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well to combine the spices with the tomato-onion mixture.

Add diced tinda (round gourds) to the pan and stir to coat them with the spice mixture.

Cover the pan and let the tinda cook on low to medium heat for about 10-15 minutes or until they become tender, stirring occasionally.

Once the tinda is cooked, remove the lid and cook for a few more minutes to allow the excess moisture to evaporate and the masala to thicken.

Garnish with freshly chopped coriander leaves.
