Cucumber chutney is a delightful and refreshing condiment that pairs well with a variety of dishes. Here's a simple recipe for cucumber chutney:
Ingredients:
2 medium-sized cucumbers
1 small onion
2-3 green chilies (adjust according to your spice preference)
1/2 cup fresh coriander leaves
1/4 cup fresh mint leaves
2 tablespoons lemon juice
1 teaspoon cumin seeds
Salt to taste
Instructions:
Begin by peeling and chopping the cucumbers. You can either remove the seeds or keep them, depending on your preference. Finely chop the onion, green chilies, coriander leaves, and mint leaves.
Heat a small pan over medium heat and dry roast the cumin seeds for a minute or until fragrant. Remove them from the heat and let them cool.
In a blender or food processor, combine the chopped cucumbers, onion, green chilies, coriander leaves, mint leaves, lemon juice, roasted cumin seeds, and salt.
Blend everything together until you achieve a smooth consistency. You can add a little water if needed to adjust the consistency.
Taste the chutney and adjust the seasoning as per your preference. If you prefer it spicier, you can add more green chilies.
Once blended to your desired consistency, transfer the chutney to a serving bowl.
You can serve the cucumber chutney immediately, or refrigerate it for a couple of hours to allow the flavors to meld together.
Enjoy the cucumber chutney as a side dish or a condiment with your favorite snacks, sandwiches, or Indian dishes.
