Ingredients:
2 tablespoons ragi flour (finger millet flour)
2 cups water
1 cup buttermilk
Salt to taste
A pinch of asafoetida (hing)
Curry leaves for garnish (optional)
Instructions:
In a small bowl, mix the ragi flour with a little water to form a smooth paste, ensuring there are no lumps.
In a saucepan, add 2 cups of water and bring it to a boil.
Once the water starts boiling, reduce the heat to low and slowly add the ragi flour paste, stirring continuously to prevent lumps from forming.
Add salt and asafoetida (hing) to the mixture. Mix well and let it simmer for 5-7 minutes until the ragi flour is cooked and the kanji thickens slightly.
Turn off the heat and let the kanji cool down for a few minutes.
Once the kanji has cooled slightly, add buttermilk and mix well. Adjust the consistency by adding more water if desired.
Pour the ragi kanji into serving glasses or bowls.
