Instruction:
Wash the poha in running water for a few seconds. Drain the water completely and keep the poha for about 5 minutes to soften.
In a mixing bowl, add poha, mashed potatoes, chopped vegetables, onions, green chilies, ginger-garlic paste, turmeric powder, red chili powder, garam masala powder, salt, and coriander leaves. Mix everything well, making sure everything is mixed well.
Sprinkle corn flour or rice flour over the mixture and mix again. The flour helps bind the mixture and makes it easy to shape the cutlets.
Take a little of the mixture and shape it into round or oval cutlets. Repeat with the remaining mixture.
Heat oil in a shallow pan or wok over medium heat.
When the oil is hot, carefully put the cutlets in the pan. Cook them in batches.
Shallow fry the cutlets till golden brown and crispy from both sides. Then gently flip them using a spatula.
Once cooked, shift the cutlets to a plate covered with paper towels to absorb any excess oil.
Serve Poha Cutlets hot with ketchup, chutney, or your favorite dip.
