Everyone wants to eat a vegetable for lunch or dinner which is very tasty, then you can try Aloo Shimla Mirchi vegetables. It is very popular among children because it is full of taste. Let us know about its recipe.
Material:
Potatoes – 5-6
Capsicum – 2
Tomatoes – 2
Cumin – 1/2 tsp
Coriander powder – 1 tsp
Red chilli powder – 1/2 tsp
Turmeric powder – 1/2 tsp
Asafoetida – a pinch
Fresh coriander leaves – 3 tbsp
( Ginger– 1-inch piece
Oil – 3 tbsp
Salt as per taste
Method:
-First of all, wash and clean the potatoes and capsicum thoroughly.
-Dry the potatoes with a clean cloth and cut them into long pieces. If you want, you can peel the potatoes.
Similarly, cut capsicum into pieces. Also finely chop green chilies, green coriander leaves, and ginger.
- Heat oil in a pan on medium flame. When the oil is hot, add cumin seeds and let them splutter.
-When the cumin seeds crackle, add finely chopped ginger, asafoetida, green chilies, turmeric powder, and coriander powder. Fry for a few seconds.
Then add chopped potatoes to it and mix it well with the spices. Cover the pan and let the potatoes cook for 5-7 minutes.
-When the potatoes become soft, add chopped capsicum to it and mix.
-If needed, you can sprinkle a little water and cover the pan again. Let the vegetables cook while stirring occasionally.
-Keep stirring the vegetables with a spatula in between.
- After cooking for some time, add red chili powder and salt as per taste. Also, add finely chopped fresh coriander and mix well.
-Finally, add chopped tomatoes to the vegetable mixture. Cook for a few more minutes until the tomatoes become soft.
-Turn off the flame. Your potato and capsicum curry is ready. Serve it with roti, paratha, or rice.
