Aloo-gobhi (is a favourite of people, especially in winter when fresh cauliflower is in season. Follow this simple recipe to make delicious Dhaba style aloo-gobhi sabzi at home.
Ingredients
Potatoes: 3-4 (peeled and chopped into small pieces)
Cauliflower: ½ head (chopped into florets)
Onion: 1 (finely chopped)
Tomatoes: 2 (finely chopped)
Ginger-garlic paste: 1 tsp
Green chillies: 2 (finely chopped)
Asafoetida: a pinch
Cumin seeds: ½ tsp
Coriander powder: 1 tsp
Turmeric powder: ½ tsp
Red chilli powder: as per taste
Garam masala: ¼ tsp
Fresh coriander leaves: chopped (for garnishing)
Oil: 2-3 large teaspoon
Salt: to taste
Instructions
Heat oil in a pan or kadhai. Add cumin seeds and a pinch of asafoetida.
Once the cumin seeds crackle, add chopped onions and saute till golden brown.
Add ginger-garlic paste and green chilies and stir. Saute for a minute.
Add coriander powder, turmeric powder, red chili powder and garam masala. Mix well. Add chopped tomatoes and cook till they become soft and oil starts separating from the masala.
Add chopped potatoes and cauliflower florets. Stir well so that the masala coats the veggies.
Cover the pan and cook on low flame.
Stir occasionally to avoid burning. If the mixture looks too dry, sprinkle some water and continue cooking till the potatoes and cauliflower become soft.
Turn off the flame once the veggies are cooked and the curry thickens. Garnish with fresh coriander leaves.
