Lauki Raita is a refreshing yogurt-based side dish made with grated bottle gourd and flavored with spices. Today we are going to tell you how you can make it.

Ingredients:

1 cup grated bottle gourd

1.5 cups plain curd (preferably whisked)

1/4 tsp roasted cumin powder

1/4 tsp black salt (optional)

1/4 tsp salt (as per taste)

1/4 tsp chaat masala ( (optional)

Fresh coriander, finely chopped, for garnish

Mint leaves, finely chopped, for garnish

Instruction:

Peel the bottle gourd and grate it with the help of a grater. Squeeze out the excess water from the grated bottle gourd.

In a mixing bowl, add the whisked curd and whisk till smooth.

Add grated bottle gourd to the curd and mix well.

Add roasted cumin powder, black salt, salt, and chaat masala to the mixture. Mix everything together until well combined.

Taste the raita and adjust the seasoning by adding more salt or spices if required.

Garnish the raita with finely chopped coriander leaves and mint leaves.

Refrigerate the raita for at least 30 minutes to allow the flavors to meld together.

Serve chilled Lauki Raita as a side dish with your favorite Indian meal.
