Material:
1 cup gram flour
1/2 cup ghee
1/2 cup sugar
1/2 cup water
1 teaspoon cardamom powder
1/2 teaspoon saffron threads
Instruction:
First of all, heat a heavy-bottomed pan on low to medium flame and add gram flour to it.
Fry the gram flour until it turns golden brown. Once roasted, take it out from the pan and keep it aside in a big bowl.
After this, add half a cup of ghee to the same pan and let it melt.
When the ghee is hot, add it to the roasted gram flour and mix well. Use a spoon to remove any lumps formed while mixing.
Now mix half a cup of sugar and half a cup of water in another pan. To prepare the syrup, keep it on medium flame.
Add cardamom powder to the syrup and mix well. When the syrup starts boiling and thickening, add saffron threads to it.
Once the sugar syrup reaches a string consistency and starts forming strings, pour it over the prepared gram flour and ghee mixture.
Mix well to combine all the ingredients. While mixing, break any remaining lumps.
Add a tablespoon of ghee to the pan and keep it on medium flame. This will prevent the mixture from sticking to the bottom of the pan.
Continue cooking the mixture while stirring continuously until it thickens and leaves the sides of the pan.
Take out the thick mixture on a greased plate. Press it firmly to shape it as desired.
Let it cool for some time. When it cools down a bit, cut it into desired shapes.
Besan Pak can be enjoyed when it cools completely. It can be stored for a week.
