Ingredients to make Rabri Kheer
Rice - 1/4 cup
Milk - 2 liters
Cashew - 10-12
Almonds – 10-12
Pistachios – 10-12
Cardamom - 1/4 tsp
Sugar - 1/2 cup
Desi ghee - 1 tbsp
How to make Rabri Kheer
To make Rabri Kheer full of taste, first, take one liter of milk and put it in a pan, and keep it on medium flame to heat. While the milk is heating up, clean and wash the rice and keep them soaked in water. Rice has to be soaked in water for at least half an hour. Keep stirring while heating the milk and when it starts boiling, keep sticking the cream falling in it on the sides of the pan.
Boil the milk till it reduces to half and pastes the cream falling in it on the sides. When the milk is reduced to half, put all the cream in the milk and mix it well. In this way, the rabdi for kheer will be ready. Now take out the rabri in a vessel and keep it aside.
Now take another pan and heat 1 tbsp desi ghee in it. After melting the ghee, add chopped cashews and almonds and roast them well. After frying the dry fruits, take them out on a plate, and after cooling down, cut them into small pieces. Now wipe the pan with a cloth and boil the remaining liter of milk in it. When the milk starts boiling, grind the soaked rice coarsely and put it in it.
Now let the kheer cook while stirring with the help of a big spoon. After 2-3 minutes add cashews and almonds to the kheer and boil it. When the rice is cooked well, mix sugar and cardamom powder in it. When the kheer is ready, add prepared rabdi to it and cook for 2-3 more minutes and then turn off the gas. Tasty Rabri Kheer is ready. Serve it hot or enjoy chilled Rabri Kheer after keeping it in the fridge for 1 hour.
