Ingredients:
- Ghee 2 tbsp
- Rice 1 cup
- Moong Dal 1/4 cup
- milk 1 cup
- water 3.5 cups
- Jaggery 2 cups (piece)
- water 1/2 cup
- Ghee 2-3 tbsp
- Cashews 1/3 cup (roughly chopped)
- cloves 2-3
- pinch of cardamom powder
Method :
1. Wash the rice and dal together in a bowl till the water runs clear, then drain the water.
2. Set a pressure cooker on medium heat and add ghee.
3. When the ghee becomes hot, add washed rice and lentils to it and roast them on medium heat until fragrant.
4. When the aroma starts coming from rice and dal, add milk and water and pressure cook for 5-6 whistles.
5. Once rice and dal are cooked, add jaggery along with water in a separate pan and cook till one string consistency, it will take around 10-12 minutes.
6. Once the jaggery solution is ready, add it to the cooked rice and dal.
7. Stir well and boil the Pongal for 3-4 minutes.
8. Now put a small vessel on a high flame and add oil to it.
9. When the oil becomes hot, add chopped cashews and cloves to it.
10. Dry roast the dry fruits till they turn lightly golden brown pour over the Pongal and add cardamom powder and mix well.
11. Your sweet Pongal is ready to be served.
